Hess Meat Market is a family-owned custom meat processor and retail butcher at 605 N. Mesquite St. in Muenster, just east of the Saint Jo corridor in Cooke County. Founded in 2010 by Stanley and Tonya Hess — who previously co-owned Fischer's Meat Market — the operation processes cattle, hogs, lambs, goats, buffalo, and wild game under USDA inspection, returning every customer's own animal cut and wrapped to spec. The market is best known for its catalog of more than 60 award-winning smoked sausages, alongside its own feedlot beef and a full retail counter open Monday through Saturday.
